The rotatory dispersion of Quartz is almost identical to that of a sucrose solution. This fact is expoited in the Saccharomat by using a quartz wedge to simulate the optical rotation of the sample. The quartz and the sample react in the same way to small shifts in wavelength and this makes the instrument self compensating for wavelenth shifts leading to a very accurate and stable measurement without the need for regular recalibration. In addition dark samples with a high absorption may be measured at NIR wavelength (882 nm) (after careful filtration see filtration unit “Autofilt Z”) without additional clarification being necessary. The Saccharomat can be coupled directly with a refractometer measuring head so that Pol and Brix values can be made at the same time, thus creating a purity analyzer.
